dc.description.abstract | Due to growing concerns about the environmental impacts of livestock farming, there has been a shift in dietary habits with a growing demand for plant-based alternatives. Using the example of chicken and mozzarella as well as their plant-based counterparts, this study evaluates their raw material sourcing strategies from a holistic sustainability perspective. The results reveale different trade-offs within and between the three sustainability dimensions studied. However, the study can clearly show that from an environmental perspective, the plant-based alternatives are always more advantageous. From an economic and social perspective, the results were less clear. | de_CH |
