Abstract:	Für die Produktentwicklung sind zuverlässige Resultate aus sensorischen Analysen unabdingbar. Um eine allgemein gültige «Schokoladensprache» für die sensorische Beschreibung von Milch- und Dunkelschokoladen zu entwickeln, wurde an der Zürcher Hochschule für Angewandte Wissenschaften (ZHAW) das Branchenpanel Schokolade gegründet.
